The Good Wurst Co. snags prime South End space for second Charlotte location

Restaurateur Lincoln Clark is doubling down on The Good Wurst Co. He’s signed a deal for a 2,700-square-foot restaurant at Vantage South End.

 

That $300 million project is being developed by Charlotte-based The Spectrum Cos. and Invesco of Atlanta. It encompasses a 5-acre block bounded by Carson Boulevard and Tryon, Catherine and Winnifred streets.

 

The goal is to open in early spring, Clark says.

 

It will be the second location for Good Wurst — following a restaurant that opened in Plaza Midwood in September 2020.

 

“It’s fun to grow and reach more of the city,” Clark says. “When I created the concept I thought this thing’s got legs if I do it right.”

 

The concept is his first solo venture; Clark is also one of the owners of Charlotte-based Fuel Pizza.

 

Good Wurst melds a New York-style deli with Clark’s love of European street food — drawing inspiration from an 18-month stint living in Europe.

 

“The food we make is fun, but we do it the way it should be done. We take it to the next level,” he says.

 

Expect a menu built around frankfurters, white hots, Italian sausage, schnitzel and house-made bratwurst. Pastrami takes a week to prepare as it’s brined, smoked and sliced in house.

 

Montreal-style bagels are made daily starting at 4 a.m. Then there are sides such as potato salad and pickles as well as sauces, mustard and cream cheese made fresh.

 

Dutch frites — half-inch, hand-cut fries — are served with everything from European mayonnaise and curried ketchup to beer cheese sauce and pastrami crumbles. Clark says the prepping process takes three days from start to finish.

 

“Sometimes I don’t think the people know what they are getting themselves into. Then they’re blown away. I think they instantly can tell we make it from scratch,” he says.

 

The goal is to deliver consistency and an experience on par with Plaza Midwood.

 

“I want to grow and make the product better,” Clark says.

 

He says he was drawn to the South End location because it was pedestrian friendly, surrounded by condos and apartments, and in close proximity to the light rail and Interstate 277.
